Sloppy Joe Zucchini Boats

What you’ll need:

1 – 1.5 lbs of Ground Beef
Optional – 1/4 Cup finely chopped onion
1 Medium zucchini
1 16 oz. Package of shredded cheese – your choice
1 14 oz. Jar of Jumbo’s or Jumbo’s Jalapeno Sloppy Joe Sauce
How to make it:

Preheat oven to 350 degrees Fahrenheit
In a medium skillet, brown the ground beef. Add onions if desired.
Drain
Add meat back to the pan, pour in the entire jar of Jumbo’s or Jumbo’s Jalapeno Sloppy Joe Sauce
Simmer until heated through, remove from heat
Halve zucchini lengthwise, hollow out the seeds, place in 9″ x 13″ baking dish
Spoon in Sloppy Joe mixture until heaping over the top of each zucchini half
Add shredded cheese to desired gooiness
Place zucchinis in the oven, bake for one hour
Enjoy!
